HOW TO COOK A PORK CHOP 

Our Red Wattle chops are the absolute best pork chops you will ever have. Juicy, tender meat and fat like buttered popcorn. This recipe prescribes an oven-finish for a pork chop about an inch and a quarter thick.

  1. Preheat your oven to 350°. 

  2. Salt pork on all sides. 

  3. Heat cast iron or other heavy-bottomed pan over medium high heat. Use only a little oil to get things started—our pork chops are going to cook gloriously in their own fat. Be careful not to crowd too many chops in the pan.

  4. Sear your meat—you’re looking for a golden brown color—about four minutes on each side. Use tongs to sear the fat cap.

  5. Transfer pan to oven. For a one-inch-thick chop, cook 4 minutes. For a thicker chop, increase cooking time to 6-8 minutes. Remove when the internal temperature registers 130° on a digital thermometer.

  6. Rest 4 minutes before serving.
